Ingredients

  • 2 cups (500 ml) cubed chicken, cooked
  • 1 cup (250 ml) red Delicious apples, diced
  • ½ cup (125 ml) celery, chopped
  • 2 tbsp (30 ml) green onions (shallots), finely chopped
  • ¼ cup (60 ml) raisins
  • 1/3 cup (75 ml) low-fat mayonnaise
  • 1 tbsp (15 ml) low-fat sour cream
  • 1 tsp (5 ml) lemon juice
  • ¼ tsp (1 ml) ground cinnamon
  • ¼ tsp (1 ml) table salt
  • ¼ tsp (1 ml) black pepper

Preparation

  1. In a bowl, combine chicken, apple pieces, celery, green onions and grapes.
  2. Whisk together remaining ingredients. Pour over chicken mixture. Mix well. Serve.
