Ingredients
Lemon chamomile granita
- 500 ml (2 cups) water
- Zest of one lemon
- 30 ml (2 tablespoons) dried chamomile
- 45 ml (3 tablespoons) honey
- 45 ml (3 tablespoons) lemon juice
White cheese with honey
- 250 ml (1 cup) quark-type fromage frais
- 30 ml (2 tablespoons) honey
Dressing
- 20 strawberries, quartered
- Zest of one lemon
Preparation
Lemon chamomile granita (prepare 12 hours in avance)
- In a saucepan, bring the water to the boil with the lemon zest.
- Remove from the heat, add the chamomile, cover and leave to infuse for 5 minutes.
- Strain the infusion, add the honey and mix well.
- Add lemon juice.
- Pour into a container, close tightly and freeze for at least 12 hours.
The granita will keep for 1 month in the freezer.
White cheese with honey
- In a bowl, combine the cottage cheese and honey.
Dressing
- Using a pastry bag or spoon, fill 4 bowls with fromage blanc.
- Top with strawberry wedges.
- Using a fork, scrape the surface of the granita to form large crystals and place 30 ml (2 tablespoons) on each dessert. Finish with lemon zest.
