Ingredients

Galette

  • 75 g (¾ cup) quick-cooking rolled oats
  • 60 ml (¼ cup) milk or almond drink
  • 1 egg, beaten or 30 ml (2 tablespoons) chia seeds mixed with a little water (replaces egg)
  • ½ sweet potato, peeled and finely grated
  • 35 g (? cup) walnuts, coarsely chopped
  • 2.5 ml (½ tsp.) ground cinnamon

Garnish

  • 2 small pears, chopped
  • A drizzle of maple syrup (optional)

Preparation

  1. In a large bowl, combine all the ingredients for the galette.
  2. Heat a well-oiled frying pan over medium-low heat and pour the mixture into the pan, spreading it evenly.
  3. Cover and cook for 5 minutes on each side, or until golden-brown.
  4. Garnish with pears and drizzle with maple syrup.
